It's about 15 miles to the shop for me. And I'll let him deal with the headers and crossmember. I think I may get electric cutouts put on too.

Just remember, if your running a carb, open cutouts require a much richer mixture due to excessive savaging. You could damage your engine.
So figure out what jets you will need to change too in order to run open pipes.
If you have fuel injection with O2 sensors, you will be fine.

Open headers will not damage the engine. It is done everyday at race tracks around the nation in addition to industrial engines that run with no mufflers or exhaust.
Carbs meter fuel per air so any increased flow from scaving of the cylinder will just help to completely fill the cylinder with proper a/F ratio inlet mixture. Jetting should remain correct if it is currently correct.
Additionally because he is only now going to dual exhausts I would guess that his cam overlap is very small so any increase in power will be more from reduced pumping losses rather than cylinder scavaging.
